This is a 0.5 academic course that introduces students to the principles and practices of organic gardening. Students will learn about soil health, pest management, cultural planting practices, composting, food preservation, and more. Most weeks class will be held in the campus community garden. Students will utilize class discussions, readings, and hands-on learning to craft strong skills in garden cultivation. In addition to physical gardening skills, students learn to think critically about various agricultural production systems and how these paradigms can impact our ecosystems, soils, and atmosphere. Students should be prepared to engage in physical work and to be outside in inclement weather. This course fulfills the experiential learning requirement.
