Insinkerator Project
The Diner is proud to introduce our next step toward a more sustainable campus this month! We have partnered with the City of Tacoma to install an insinkerator food waste disposal system in our dish room. The insinkerator works much like a garbage disposal in your own kitchen. When food waste comes into the dish room it will be disposed through the insinkerator and will be transported via the City's insinkerator program to the waste water treatment plant.
While food waste can be composted, Puget Sound is not currently set up for the large-scale composting that we would require in the Diner. In lieu of an effective composting program, the insinkerator will allow us to sustainably dispose of our food waste and cut the emissions caused by transportation of food waste. Since the city already has an insinkerator program in place, they have agreed to partner with us in an effort to build a greener Tacoma!
